Bel partners Standing Ovation to transform dairy waste into protein 

The process involves precision fermentation, where microorganisms are engineered to transform dairy waste into functional proteins

FRANCE – French dairy giant Bel Group has partnered with precision fermentation startup Standing Ovation to convert dairy waste into high-value proteins, marking a significant step toward sustainable food production.

The collaboration leverages Standing Ovation’s advanced technology to produce animal-free casein proteins from acid whey, a byproduct of cheese manufacturing.

The process involves precision fermentation, where microorganisms are engineered to transform dairy waste into functional proteins. 

These proteins, particularly casein, are essential for creating dairy products like cheese, yogurt, and ice cream. 

According to Bel, this initiative aligns with its commitment to sustainability by reducing waste and minimizing environmental impact. 

Standing Ovation’s technology ensures the proteins retain the taste, texture, and nutritional qualities of traditional dairy while addressing ethical and ecological concerns.

“We are excited to push sustainable dairy forward by turning acid whey into valuable proteins,” said a Bel Group.

The partnership builds on Bel’s earlier investment in Standing Ovation in 2022, which included an equity stake and plans to integrate precision-fermented proteins into brands like Laughing Cow, Boursin, and Babybel.

Standing Ovation, founded in 2020, has developed a patented process that produces casein with a significantly lower carbon footprint. 

An independent life-cycle assessment, cited by Green Queen, found that their precision-fermented casein generates 94% fewer greenhouse gas emissions and uses less water and land compared to conventional dairy production. 

“Our technology offers a sustainable path to meet the growing demand for proteins,” said Yvan Chardonnens, CEO of Standing Ovation.

The collaboration also taps into the growing global precision fermentation market, valued at US$4.21 billion in 2024 and projected to reach US$45.80 billion by 2031, according to a report by Coherent Market Insights. 

This growth is driven by rising demand for plant-based and non-dairy products, particularly among vegan and lactose-intolerant consumers. 

Standing Ovation’s Advanced Casein is versatile, suitable for various applications, from dairy alternatives to protein bars.
